Capsicum Chicken Rice Ingredients:
Rice – 250 gms,
capsicum – 15 nos,
green peas – 50 gms,
chicken – 250 gms,
cashew nuts – 1 tbsp,
grated carrot – 2 tbsp,
ghee – 1 tbsp,
salt – to taste,
onions – 50 gms,
green chillies – 5 nos.
Capsicum Chicken Rice Preparation:
Cook the rice and keep it aside.Keep the pan on the stove add ghee and fry the onions in the ghee. Add the chopped green chillies and cooked green peas to it and fry and the broken cashew nuts to it and add rice and sauté it. Add salt to taste after the mixture is cooked remove it from the stove.Take deboned chicken and cut it into small pieces add salt and pepper and keep it aside for half an hour. Keep the pan on the stopve pour ghee and fry the chicken pieces.Take a large pan heat it and add ghee to it and fry the onions, add tomato puree, chilli powder cornflour and mix it well.Add garam masala and water cook it well add chopped coriander leaves and dissolved green campher & mix it well.Take the deseeded capsicum and cut them into cup shapes and fill in the rice mixture into the cup shaped capsicums and on top of the rice mixture keep few pieces of fried chicken pieces.Fill all the capsicum in the same manner. Arrange all the capsicum nextly in the pan in which the masala is being done and cover it. Simmer it and keep it for few minutes in fire and remove from fire and eat when cooled.
