Pineapple Pudding Ingredients:
250gms unflavored gelatin 1/2 unsweetened pineapple juice 1 tsp almond extract 1/2 cup crushed pineapple 1 cup cottage cheese Sugar - 2 tsp 1 whipped topping 1/2 cup milk
Pineapple Pudding Preperation:
Add gelatin over pineapple juice in a small saucepan let it stand 5 mins to soften. Add Almond extract. Heat just until gelatin melts. Let the
pudding to cool down to room temprature.
Add pineapple chunks, cottage cheese and sugar in a blender or food
processor. Process until pureed. Mix in gelatin mixture. Combine
whipped topping mix and milk.Beat until stiff peaks form. Fold into
gelatin mixture. Pour into a bowl Serve it cold. |
