Bhoona Gosht Ingredients:
1 and 1/2 lb (675 g) Lean Meat, weighed after
Discarding unwanted matter 3 tbsp Ghee 1 tbsp minced
Garlic 4 oz (110 g)
Onions, finely chopped 2 tbsp Mild Curry paste
1 Red Pepper, seeded and finely chopped 2 oz (50 g)
Tomatoes, chopped
1 tbsp Paprika 1 tbsp chopped fresh coriander
Bhoona Gosht Preparation:
Cut the meat into cubes about 1 and (4 cm) in size, remembering that they will shrink in size during cooking as liquids come out. Heat the Ghee in a karahi or wok. Stir fry the garlic for a minute, then add the onion and continue for 5 minutes. Using a 4-5 pint (2.25 - 2.75 liter) casserole dish with lid, combine the fried ingredients and the meat. Add the red pepper, and tomato and place in preheated oven (375F / 190C / Gas After 20 minutes, inspect and stir adding water if it is becoming too dry, but remember Bhoona should be quite dry. Repeat 20 minutes later, adding the remaining ingredients and salt to taste. Cook for 20 more minutes or to your liking.
