Recipe : Spicy Eggplant Dish
Description
5 medium Eggplant
1 cup rosted penut powder
1 cup oil
1/2 tbs ginger and garlic past
1/2 Termeric powder
1 cup chopped onion
1 tbs musterd seed
2 tbs chilli powder
2 tbs seaseme seed
5 curry leaves
1 tbs salt
1 tbs jaggery
1/2 cup celantro and grated coconut for garnishing
Method :
1. Cut the eggplants into 4 quaters
2. Fry the eggplants in a oil and keep aside
3. In a medium heat , put the oil in a pan... once the oil is heat put mustard seeds , curry leaves and chopped onion and fry them for a min ...Add termeric powder, salt, ginger -garlic paste,penut powder, chilli powder and seaseme seeds fry for a min and then turn off the gas then add jaggery mix the spices very well . Now the spicy masala is ready to fill.
4. In a fried eggplant stuff or fill the spicy masala.
5. In a nonstick pan , put some oil and keep the filled eggplants (keep the head in tag) and cover the pan, fry them on a lower flame .... every 3-4 min just turn the egglants... like this you have to do 3 times and see the eggplants cooked well then turn off the flame.
Now the dish is ready ...you can garnish it with chopped cilantro and grated coconut
Note: If you want gravy then you can also add cup of water in the spicy eggplant dish
